You can't actually animate the Matrix extrude tool but using poses and either morphing or a PoseMixer you can simulate this to some extent. Here's a sample scene showing how.

The scene file uses Sub Surface Scattering but this is not essential to see how the morphing works.

Note:  Owners of the MoGraph module can use the extrude deformer to achieve the same effect
