Google has led me to several posts about changing the default keyframe interpolation. They all refer to a little folder icon next to a sound icon.

Well, I don't have either icon in my R13 setup. Where else can I do this?

Things were tidied up in R13. Open the Project settings/Key Interpolation. The sound icon is in the Animation menu.
If in doubt, scream and shout.
